We use a high-quality ethanol produced from whey, a natural by-product of pure grass-fed New Zealand milk. Traditionally, ethanol is manufactured using molasses, cane sugar or grain as the raw material, or synthetically from petroleum. We source our ethanol from one of the few producers in the world where casein whey is the feedstock for ethanol production. The ethanol produced is of the highest commercially available quality in the world at 96.2% ABV. This is exactly what we need for our brand, Clarity, to start our gin distillation process.
